  • Prunes in Red Wine with Ice-Cream

    Celebrate summer by treating yourself to a bowl of yummy vanilla ice-cream, topped with tasty prunes cooked in red wine. Here are the steps on how to prepare yourself this little bowl of delight.

    Ingredients:

    • A Bottle of Red Wine (I was such a scrooge that I got myself an incredibly cheap table wine. In retrospect, I wished I had dumped in more pennies...)
    • A Tub of Vanilla Ice-Cream (I used cookies and cream here because I couldn't get any tub of vanilla ice-cream in the supermarket near home! Can you believe this?! There were only cookies and cream, matcha and strawberry flavors, so I went for cookies and cream as it was the closest I could get to vanilla flavor.)
    • 6 Cloves
    • 2 Cinnamon Sticks
    • 1/4 Cup of Sugar
    • Half a Lemon (sliced)
    • 700g Dried Prunes

    #1. Simmer the red wine, cinnamon sticks, lemon slices, sugar and cloves in a pot for about ten minutes.

    #2. Add in the prunes and simmer for another 10 minutes.

    #3. Remove heat and chill in room temperature for at least 3 hours.
    #4. Serve the ice-cream, topping it with the prunes and a bit of sauce. (You can keep the rest in the fridge overnight for the prunes to fully absorb the rich flavors

    of the red wine sauce.)
